Ingredients

  • 1 cup milk at room temperature - 7 7/8 oz.
  • 3 tbsp. butter softened - 1 1/2 oz.
  • 4 tbsp. sugar - 1 3/4 oz.
  • 1 tbsp. brown sugar, packed - 3/8 oz.
  • 1 egg at room temperature - 2 oz.
  • 1 tsp. kosher salt - 1/4 oz.
  • 2 1/2 tsp. Vietnamese cinnamon - 1/4 oz.
  • 3 cups bread flour - 13 7/8 oz.
  • 2 1/4 tsp. instant yeast (SAF) - 1/4 oz.
  • 1 cup raisins - 5 1/4 oz.

Step 1

Add all ingredients, except raisins, in the order given above. Set the bread machine on the dough cycle.

Add the raisins at the signal on your bread maker. This dough is very soft and has a high rise. On the Zo (bread maker) it will be at 112 minutes. You have a 5 minute time frame.

Remove the dough at the end of the cycle and put in your baking pan that has been sprayed with a non-stick spray.

Preheat your oven to 350 when it has reached that teperature place bread in oven for 30-35 minutes. Remove from pan immediately and brush with butter, place on a cooling rack until completely cooled. Slice and place in a plastic bag.

Note: You can usebaker's dry milk for your liquid milk. 1/4 cup to 1 cup water. Or 1 1/4 oz. to 7 7/8 oz. water.

Note: If you want to make 2 smaller loaves take dough out of the bread maker when ready divide the dough in half and put in 2 loaf pans and let rise for 1 hour before baking!
