Spinach and Rice (Spanakorizo)

Ingredients

  • 1/3 cup olive oil
  • 2 onions, chopped
  • 2 pounds, fresh spinach
  • 1 (8 ounce) can tomato sauce
  • 2 cups water
  • 1/2 cup uncooked brown rice
  • 1 t dill weed
  • 1 t parsley
  • salt and pepper to taste
  • fresh lemon juice
  • feta cheese

Preparation

Step 1

1. Heat olive oil in a large skillet over medium heat. Saute onions in the oil.
2. Add spinach and cook for a few minutes while stirring.
3. Pour in the tomato sauce and water. Bring to a boil and season with parsley, dill, salt and pepper.
4. Stir in rice. Reduce heat to low and simmer uncovered for 20-25 minutes or until rice is tender. Add more water if necessary.
5. Garnish with fresh lemon juice and feta cheese, if desired.
