German Potatoes

Ingredients
- 2 3/4 pounds russet potatoes ( about 4 large)
- Olive oil for frying
- 2 tbs unsalted butter ( 1/4 stick)
- 1 1/2 cups chopped onions
- 1/2 tsp Paprika

Step 1
1. Peel potatoes and cut into 1/2 inch cubes. rinse with cold water. Drain. Pat potatoes dry with kitchen towel
2. Pour oil into heavy skillet to depth of 3/4 inch. Heat over medium high heat until thermometer registers 375. Working in batches, add potatoes to skillet;cook till light golden about 3 minutes. Using slotted spoon, transfer potatoes to paper towels and cool
3. Melt 1 tbs butter in large heavy skillet over medium high heat. Add onions and paprika and saute till onions are golden, 5 minutes. ( can be prepared 8 hours ahead, cover separately and keep at room temperature)
4. Preheat oven to 400. Melt remaining butter in skillet with sauteed onionsover medium high heat , add potatoes and saute till golden brown about 3 minutes, season with salt and pepper to taste. Spread mixture on a large heavy baking sheet. Bake until potatoes are cooked through and crisp about 15 minutes
