Grilled Chicken Cutlet Parmigiana

Ingredients

  • 2 pounds chicken breast, thinly cut
  • Extra-virgin olive oil
  • Salt and pepper
  • 3 cloves garlic, chopped
  • 1 small onion, finely chopped
  • 1 (28 ounce) can diced tomatoes
  • 1 cup basil (fresh or dried)
  • 1/2 cup Parmigiano-Reggiano cheese
  • 1/2 pound smoked Mozzarella, thinly sliced

Preparation

Step 1

Preheat the broiler to High.

If possible, use an outdoor or indoor grill. Heat the grill on High. Lightly coat the chicken with olive oil and season with salt and pepper. Cook about 3 to 4 minutes on each side and until the chicken’s juices are clear. Place on a foil-covered platter.

In a medium saucepan, add 2 tablespoons of extra-virgin olive oil and coat the bottom of the pan. Add the garlic and onion. Cook 10 minutes, stirring often. Add tomatoes and heat thoroughly, about 2 minutes. Add the basil and season with salt and pepper.

Layer the chicken and sauce in a baking dish. Top with the cheeses. Brown the chicken in the broiler for 3 minutes.
