Vegan Chai Latte Cupcakes with Chai Spice Frosting 0 Picture

Ingredients

  • Dry Ingredients:
  • 1 1/2 cup all purpose flour
  • 2/3 cup instant chai latte powder (the chai latte mix from Trader Joe's works perfectly)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Wet Ingredients:
  • 1/4 cup vegan margarine (earth balance), softened
  • 1/4 cup oil (sunflower, grape seed or vegetable all work)
  • 1/4 cup vegan vanilla yogurt
  • 1/3 cup applesauce
  • 1/3 cup vegan sour cream
  • 2/3 cup almond milk
  • 1 Tbsp vanilla
  • Chai Spice Frosting:
  • 1/4 cup vegan margarine (earth balance), softened
  • 1/4 cup almond milk
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 4 cups powder sugar

Preparation

Step 1

1. Line cupcake tins with paper or foil liners. Preheat oven to 350 degrees.
2. In a mixing bowl, sift the dry ingredients together. In another mixing bowl, mix the wet ingredients together, until well combined. Pour the wet ingredients into the dry ingredients bowl and mix until all dry ingredients are wet and there are no lumps. Do not over-mix.
3. Fill cupcake liners 2/3 full. Don't over fill or the cupcake will rise to high and the tops will combine together (If tops are stuck to tin, use a butter knife and gently loosen the top portions that are stuck) Bake the cupcakes for 15-20 minutes or until toothpick comes out clean. Check at 15 minutes and watch after that. Let cupcakes cool about 20 minutes.
CHAI SPICE FROSTING:
1. Combine all of the ingredients in a mixer bowl and mix everything, by hand, until just combined.
2. Using a mixer (either stand or hand), mix the ingredients together until frosting is light and fluffy, roughly 5-7 minutes. Watch the frosting and if the consistency does not look right, add either almond milk or sugar and blend again until light and fluffy.
