Bacon Wrapped Pork Chops with Cherry Sauce

- Cherry Sauce:
- 2 cups frozen unsweetened dark cherries
- 1/2 cup dried cherries
- 1/2 cup sugar
- 8 dried apricots, finely chopped (1/2 cup)
- 1 strip orange peel
- 1/4 tsp ground cinnamon
- Pork Chops:
- 4 thick slices applewood-smoked bacon
- 4 (8oz) boneless pork loin chops, 1 in thick
- 2 tsp vegetable oil

1. For the sauce, in a small saucepan combine frozen cherries, dried cherries, sugar, apricots, orange peel and cinnamon. Add 3/4 cup water; mix well. Bring to boiling; reduce heat to medium-low. Cook 15 to 20 minutes or until mixture thickens, stirring occasionally. Remove orange peel; transfer sauce to a small serving bowl. Set aside until serving time.
2. For the chops, preheat oven to 375 degrees. Wrap 1 bacon slice around each chop; secure the ends with wooden toothpicks. Season with salt and pepper to taste. Brush a large ovenproof skillet with oil; place over medium-high heat until hot. Add chops; cook 4 to 6 minutes per side.
3. Place skillet with chops in oven. Bake 15 to 18 minutes or until an instant-read thermometer inserted into the center registers 145 degrees. Transfer chops to a platter. Cover loosely with foil, and let stand 5 minutes. Serve chops with sauce.
