Sundried Tomato Spread

Ingredients

  • 1/4 cup Sun-dried Tomatoes (finely chopped)
  • 1/2 Shallot (finely minced)
  • 1 Anchovy Fillet (smashed and chopped into paste)
  • 2 tablespoons Fresh Parsley (finely chopped)
  • 1 tablespoon Brined Capers (drained)
  • 3 tablespoons Extra Virgin Olive Oil

Preparation

Step 1

Combine all ingredients and mix until thoroughly combined. Serve with toasted or grilled bread.

Makes 8 servings.
