Mexican Cinnamon Rice

Ingredients

  • 1/2 cup ( 1 medium-sized ) chopped yellow onion
  • 1 clove minced garlic
  • 2 Tablespoons butter
  • 1 cup long-grain white rice, well rinsed
  • 1/4 cup dried currants
  • 2 1/4 cups chicken broth
  • 2 teaspoons cinnamon
  • 2 Tablespoons chopped cilantro

Preparation

Step 1

Saute onion, and then garlic, in the butter, stirring until onion is tender. Add the rice, currants, broth, and cinnamon. Bring to a boil, cover, and reduce heat; simmer 15 minutes. Fluff rice, cover again, and allow to stand for 10 minutes. Stir in cilantro.
