Gourmet Turkey-Apple Loaf

Ingredients

  • 2 Granny Smith or McIntosh apples quartered, and core removed
  • 1 onion peeled, quartered
  • 1 garlic clove peeled
  • 1/2 bunch fresh parsley thick stems
  • removed and washed
  • 2 teaspoons unsalted butter
  • 1 1/2 pounds lean ground turkey
  • 1/2 cup rolled oats or whole grainbread crumbs
  • 2 eggs organic preferred
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon marjoram
  • 1/2 teaspoon sage
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly-ground black pepper

Step 1

Preheat oven to 350 degrees.

In a blender or food processor, pulse mince the apples, onion, garlic, and parsley.

Melt the butter in a medium skillet, on a moderate flame. Add the apple mixture. Cook until the onions are translucent, about 5 minutes. Stir frequently. Remove from the flame and cool.

In a large bowl or processor, mix the apple mixture, turkey, oats, eggs, mustard, marjoram, sage, salt, and pepper.

Lightly oil a 9- by 5-inch loaf pan. Pat the turkey mixture into the pan. Bake until the top is golden, about 1 hour.

Remove the loaf from the oven, pour off any excess fat, and invert onto a platter. Slice and serve.

This recipe yields 4 servings.

Healthful Hint: Ground turkey from the supermarket often contains turkey skin, which increases its fat content substantially. For the leanest ground turkey, call ahead and ask the butcher to grind skinless turkey breast for you. It will be ready to pick up when you get there.
