BLACK BEAN BURGERS

Ingredients
- 1-15 oz. can black beans, drained (I like the Bush’s – they’re softer and easier to mash!)
- 1/4 c salsa (I use Pace chunky or the Arriba Black Bean and Corn)
- 1/2 onion, chopped
- 1-2 cloves garlic, minced
- 1/4 c frozen corn kernels
- 1 egg
- 1/2 c bread crumbs (or gluten free corn flake crumbs)
- 1/4-1/2 Tbs. Cajun seasoning, or to taste
- 1-2 Tbs. olive oil, for frying
- 4 buns
- Garnishes of choice – grilled onions, lettuce, tomato, salsa, sour cream, avocado

Preparation
Step 1
Place beans in large mixing bowl. Mash with potato masher (I use a pastry cutter) until chunky. Add salsa, onion, garlic, corn egg, bread crumbs and Cajun seasoning, mashing together with potato masher. Refrigerate 1-2 hours.
Form into 4 patties. Heat a small amount of oil in skillet. When it’s hot, fry patties, turning when done on one side and adding more oil as necessary. (They cook quickly)
