Ingredients

  • 3 lb chicken
  • 16 oz dried great northern beans
  • ham bone
  • 1-1/2 lb smoked sausage
  • 1-1/2 cup chopped onion, sauted until golden
  • 1 clove garlic, minced
  • 1 1-lb cans chopped tomatoes
  • 1 cup white wine
  • 1 bay leaf
  • 1 parsley sprig
  • thyme
  • salt
  • pepper

Preparation

Step 1

Soak beans overnight.

Cover chicken with water and simmer over moderate hat approximately 1 hour. Shred chicken, reserve stock.

Rince beans and put in large pot with chicken, cover with stock. Simmer 1-1/2 to 2 hours. Add ham bone, sauted onions, garlic, and seasonings. Simmer 2-3 hours, adding sausage the last hour.
