Ingredients
- 2/3 cup butter or margarine
- 1 cup sugar
- 2 eggs or 1/2 cup egg substitute
- 1 8oz container sour cream
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup raisins
- 1/2 cup red candied cherries, chopped
- 1/2 cup green candied cherries, chopped
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 cup chopped pecans
Preparation
Step 1
Beat butter and sugar in a medium mixing bowl with an electric mixer on medium-high speed til light and fluffy. Add eggs or egg substitute, sour cream, and vanilla; beat til well combined. Stir together flour, baking powder, baking soda, and salt. Add to sugar mixture; beat til combined. Stir in raisins and 1/3 cup each of cherries, reserving remaining cherries for topping. Pour batter into greased 13x9 inch pan.
Stir together brown sugar, cinnamon, pecans, and reserved cherries; sprinkle evenly over batter. Cover and refrigerate overnight.
Uncover and bake in a 350 oven for 35-40 minutes. Serve warm or cooled.
