Creamy Ham and Tortellini

Ingredients

  • 1 package (9 oz) refrigerated cheese-filled tortellini
  • 1 tablespoon olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 2 cups cubed (1/2 inch) cooked ham
  • 2 cups frozen chopped broccoli (from 1-lb bag)
  • 1 cup whipping cream
  • 1/4 cup shredded Parmesan cheese (1 oz)

Preparation

Step 1

1 Cook and drain tortellini as directed on package.

2 Meanwhile, in 12-inch skillet, heat oil over medium heat. Add onion; cook 4 to 5 minutes, stirring frequently, until lightly browned.

3 Stir in ham and broccoli. Cook 5 minutes, stirring occasionally.

4 Stir in cream and cheese. Heat just to boiling over high heat. Stir in tortellini. Reduce heat to medium; simmer uncovered 4 to 5 minutes or until thoroughly heated.

Serves 4

You could substitute cubed cooked turkey or chicken for the ham.

Serve with crusty French or Italian bread, with extra-virgin olive oil on the side for Italian-style dipping.
