Ingredients
- 2 lbs. beef tenderloin
- 1 medium onion, sliced thin
- 7 tbsp. butter (must use butter)
- 1/2 lb mushrooms, sliced
- 2 tsp. tomato paste
- 1/2 tsp. paprika
- 2 tbsp. lemon juice
- Salt and pepper
- 1 cup sour cream
Preparation
Step 1
Cut beef into narrow strips, 2 inches long and 1/2 inch thick. Sear in 3 tbsp. butter. Set aside. Saute onions in remaining 4 tbsp. butter until clear. Add mushrooms to onions and saute for a few minutes Add tomato paste, paprika, lemon juice, salt and pepper to taste to onion mixture. Add seared meat to onion and mushroom mixture. Cook slowly fro 25 minutes. Just before serving, add sour cream. Warm slowly. Do not boil. Meat mixture can be made the day before. It should then be reheated again, and add the sour cream just before serving and heat slowly.
Serves 4-5.
NOTE:
May be served over lightly buttered noodles or rice.
