Oven Fried Chicken

Ingredients

  • 6 pounds chicken, 2 chickens cut into pieces or 8 chicken breasts
  • 1 quart buttermilk
  • 1/3 cup dry bread crumbs
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon butter, melted
  • Vegetable oil

Preparation

Step 1

Rinse chicken and pat dry. Place in baking dish and top with buttermilk, making sure that all pieces are coated. Cover and refrigerate overnight.

Preheat oven to 350° F.

In a mixing bowl, combine bread crumbs, basil, oregano, salt, and pepper.

In a large skillet, add vegetable oil (to 1 1/2" deep) and heat over medium-heat to 350° F. Working in small batches, take each piece of chicken and thoroughly coat with breading mixture. Place in oil. Cook on each side about 4 to 5 minutes. Remove and place in lightly greased baking dish.

Bake for 30 to 40 minutes or until the chicken is tender and no longer pink. Do not turn.
