Canadian Blueberry Dessert

A perky little pudding. Can be made with fresh berries in the summer or frozen berries during the off season.

Ingredients

  • 4 Cups fresh blueberries (or 16 oz frozen)
  • 2 Tablespoons lemon juice
  • 2/3 Cup packed brown sugar (as 2 1/3 measures)
  • 2 Teaspoons cornstarch
  • 2/3 Cup quick-cooking oats
  • 1/2 Cup all-purpose flour
  • Dash of salt
  • 1/3 Cup margarine or butter
  • Vanilla ice cream (optional)

Preparation

Step 1

Toss blueberries with lemon juice in ungreased 1 1/2 quart casserole. Mix 1/3 cup brown sugar and cornstarch; stir into blueberries. Mix oats, flour, 1/3 cup brown sugar and salt. Cut in margarine/butter with fork until crumbly. Sprinkle over blueberry mixture. Bake at 350 degrees until topping is light brown and blueberries are bubbly, about 40 minutes. Serve warm with ice cream.
