Strawberry Layer Dessert

Ingredients

  • 2-1/2 – 3 dozen vanilla sandwich cookies, crushed
  • 1 stick butter, melted
  • 8 oz cream cheese, softened
  • 1-1/4 cup sugar, divided
  • 16 oz Cool Whip, divided
  • 4 cups chopped strawberries (approximately 2 lb container)
  • 3 rounded TB cornstarch
  • 3 rounded TB strawberry jello (dry mix)
  • 1 cup water

Preparation

Step 1

In medium saucepan, mix water, 1 cup sugar, jello and cornstarch. Cook over medium heat until thickened, stirring constantly. Remove from heat and cool to room temperature. Combine cookie crumbs and melted butter; press onto bottom of greased 9 x 13 pan. Mix cream cheese and ¼ cup sugar, beat until well blended and creamy, fold in 1 cup Cool Whip and spread mixture over cookie crust. When strawberry glaze mixture has cooled, fold in chopped strawberries. Mix well and spoon over cream cheese layer. Top with remaining Cool Whip. Refrigerate until ready to serve ( at least 2 hours).
