Ingredients
- 1 cup sifted flour
- 1 tbsp. sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 1/2 cup milk
- 2 tbsp. vegetable oil
- 6 medium, ripe bananas
- Oil for frying
- Confectioners' sugar
Preparation
Step 1
Sift the flour, sugar, baking powder and salt into a small bowl. In another bowl, beat the eggs, milk and oil with a rotary beater or whisk. Combine the liquid ingredients with the dry ingredients and stir until all the flour is moistened.
Slice bananas in half lengthwise. With your fingers, dip them into the batter. Drain any excess batter back into the bowl and drop the bananas into at least 2 inches of oil heated to 375 degrees in a deep skillet or deep-fat fryer. Fry a few at a time, turning once, 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately, sprinkled with confectioners' sugar. Makes 6 servings
