Ingredients
- 2 jalapeños (about 3” long), seeded and diced
- 1 medium onion, chopped
- 4 large cloves garlic, chopped
- 1 (29 ounce) can whole tomatoes (plus juice)
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon cumin
Preparation
Step 1
In food processor, place jalapeños, onions, and garlic; process for a few seconds. Empty into a bowl.
Drain the liquid from the whole tomatoes into the bowl of vegetables. Put the whole tomatoes into the food processor; process until chopped well. Add vegetable mixture, cans of tomatoes/chilies, salt, sugar, and cumin. Process all ingredients until well blended but do not puree. Place in covered container and chill for several hours to help blend and enrich the flavor.
