Pineapple Pudding

Ingredients

  • 2 Tablespoon Butter/Margarine
  • 1 1⁄2 Cup (24 tbs) Sugar
  • 3 Tablespoon All purpose flour
  • 1 Pinch Salt
  • 3 Eggs , beaten
  • 2 Cup (32 tbsp.)Milk
  • 1 ⁄4 Cup (4 tbs)Evaporated milk
  • 8 1⁄4 Ounce Can, undrained (1 Can) Canned crushed pineapple
  • 1 Teaspoon Vanilla extract
  • 1 Cup (16 tbs) Chopped pecans/Walnuts (optional)
  • 4 Dozen (48 wafers )Vanilla wafers
  • 1 Cup (16 tbs),Whipping cream whipped

Preparation

Step 1

1) Take a heavy sauce pan and melt butter in it.
2) Add flour, salt and sugar. Stir them in.
3) Add the milk and eggs and blend them well by stirring.
4) Cook on moderate heat, stirring continuously until mixture thickens.
5) Remove pan from heat and add vanilla, pineapple and pecans stirring them in.
6) Cool the mixture.

FINALIZING
7) Take a 1 ½ quart sized casserole and lightly grease it.
8) Line the bottom and sides with vanilla wafers.
9) Add half of the pudding with the help of a spoon.
10) Arrange vanilla wafers on top along with the remaining amount of pudding.
11) Add the extra vanilla wafers to the outside edge of the pudding.

SERVING
12) Top with whipped cream and serve.
