  • FILLING:
  • 4 cups blueberries, fresh or frozen
  • 1 teaspoon vanilla
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 3 1/2 tablespoons Truvia, or 1/2 cup sugar substitute
  • 1 teaspoon xanthan gum
  • TOPPING:
  • 4 large eggs
  • 1/2 cup coconut oil or butter, melted
  • 2 tablespoons + 1 teaspoon Truvia, or 1/3 cup sugar substitute
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup coconut flour
  • 1/4 teaspoon baking powder

Step 1

Combine all the filling ingredients and pour in a 1 1/2 quart baking dish.

In a medium bowl, blend together the eggs, oil or butter, sweetener, vanilla, and salt. Mix in coconut flour and baking powder until batter is smooth. Spread batter evenly over blueberries.

Bake for 25-30 min at 400 degrees until top is browned.
