Ingredients
- 1 cup milk
- 2 eggs
- 2 cups flour
- 1 teaspoon salt
- 4 tablespoons butter

Step 1
Mix milk, eggs, flour and salt in a bowl, stirring with a spoon to form a light dough. Do not overmix, stirring only enough to make lumps disappear. Bring a large pot of lightly salted water to a boil. Run dough through a spaetzle machine or place dough in a colander with large holes, pushing the dough through with the back of a spoon. Return water to a boil, stirring lightly. By the time the water reboils - approximately 1-1-1/2 to 2 minutes the spaetzle should be done. Remove from heat and immediately rinse the spaetzle in cold water. Drain and pat dry with a towel. Melt butter in a large skillet over medium high heat and saute spaetzle without browning for 3-4 minutes.
