Marshmallow Coconut Cake

Ingredients

  • 1 boxed white cake mix (prepare w/all ingredients as listed, except use cream of coconut instead of water) and add 1 small box cream of coconut pudding mix. Mix all ingredients together.
  • 2 cups mini marshmallows

Preparation

Step 1

Preheat oven to 350. Spray 13x9 pan with baking spray. Line entire bottom of sprayed pan w/mini marshmallows. Pour cake mixture over mini marshmallows and bake according to box directions til cake is done.

Allow to cool.

Coconut Icing:

1 large bag sweetened flaked coconut

1 stick butter

1 8 oz. brick cream cheese

4 cups 10x sugar

1 tsp. vanilla

1 cup Marshmallow Cream

2-4 tblsp. cream of coconut

Cream butter and cream cheese together til smooth. Gradually add 10x sugar until smooth and creamy. Add 1 tblsp. cream of coconut at a time to smooth icing. When all sugar has been added, add vanilla and marshmallow cream. Beat til smooth and creamy.

Frost cake and top w/shredded coconut.
