Ingredients
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. salt
- 3 eggs
- 1 1/2 cups sugar
- 3/4 cup mayo
- 1 can (8oz.) crushed pineapple, undrained
- 2 cups coarsely shredded carrots
- 2 cups coarsely chopped pecans
Preparation
Step 1
Preheat oven to 350.Grease and flour 2 (9") round baking pans.
In a bowl stir together first 5 ingredients; set aside. In large bow with mixer at medium speed beat next 4 ingredients until well blended. Gradually beat in flour mixture until well mixed. With spoon stir in carrots and pecans. Turn into prepared pans.
Bake for 30 to 35 minutes. Cool in pans for 10 minutes. Remove; cool. Fill and frost with cool whip or cream cheese icing.
