Ingredients
- 2 cups grated fresh carrots
- 1/2 cup yellow onion, minced
- 2 tbsp butter
- 2 cups shredded zucchini with excess water squeezed out
- 4 eggs, beaten well
- 1/2 cup cheese of your choice
- 1/2 to 3/4 cup flour
- Olive oil for frying
- Salt, to taste
- Pepper, to taste
Preparation
Step 1
Saute onion and carrots in butter until the onion is translucent. Meanwhile, beat together eggs, cheese and flour. Add the zucchini and the sauteed mixture.
Blend well. In a skillet, heat olive oil on medium heat until a drop of water dances in the oil. Add the fritter batter about three tablespoons at a time and fry until golden brown around the edges.
Much like potato fritters, zucchini fritters can be served with fresh applesauce as a side dish.
