Ingredients
- 1 cup shredded coconut (sweetened is preferred)
- 2 cups flour
- 1 Tbs baking powder
- 3 Tbs sugar
- 1 tsp salt
- 1 egg
- 1 cup milk
- 1/2 cup oil
Preparation
Step 1
In a medium bowl, sift together dry ingredients except coconut flour, baking powder, sugar, and salt). Set aside.
In a small bowl, combine egg, milk, and oil. Add egg mixture to dry ingredients, stirring only until dry ingredients are mostened. Add shredded coconut. The batter will be lumpy.
Spoon into lightly greased muffin tins, filling each cup half to two-thirds full. Bake in 375 degree oven 15-20 minutes or until golden brown.
