Roasted Sweet Potatoes (Paleo)

Ingredients

  • 2 tablespoons coconut oil, melted
  • 2 pounds sweet potatoes, cut into 1-inch chunks (about 4 cups)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp cinnamon
  • 1/2 teaspoon fine sea salt, to taste
  • 1/4 teaspoon ground black pepper, to taste

Preparation

Step 1

Preheat oven to 400°F.
Peel the sweet potatoes, and chop them into 1-inch pieces.
Toss potatoes together with melted coconut oil in a large bowl until evenly coated.
Combine spices in small bowl. Add the spice blend to the sweet potatoes and toss again to spread the spices evenly.
Spread potatoes in a single layer on a large rimmed baking sheet. Roast, stirring occasionally, until tender, 30-40 minutes. Transfer to a serving bowl.
