Turkey & Broccoli Stir-Fry

Ingredients
- 1 pound turkey breast cutlets, cut into 1/2 inch strips
- 1 T. dry white wine or sherry
- 2 T. low-sodium soy sauce
- 1 Cup low-sodium chicken broth
- 1 T. cornstarch
- 3 T. vegetable oil
- 6 T. slivered almonds
- 1/3 cup green onions (can use regular onion) thinly sliced
- 2 cloves garlic, minced
- 1 pound fresh broccoli, cut into 1-inch pieces
- 1/2 pound fresh mushrooms, sliced

Step 1
1. In a medium, bowl, combine turkey, wine and 1 T. soy sauce. Set aside.
2. In a small bowl, combine broth, remaining soy sauce and cornstarch. Set aside.
3. In a wok or large skillet over medium high heat, stir-fry almonds, stirring to coat in 2 T. oil. Add turkey and stir-fry until turkey loses pink color and almonds are lightly browned. Remove from pan.
4. Add remaining oil and stir-fry onions, garlic and broccoli until vegetables are tender-crisp.
5. Add mushrooms and stir-fry for an additional minute.
6. Fold in turkey and almonds. Add broth mixture; cook and stir until thickened.
7. Serve over rice, if desired.
