Clementine Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (8 ounces) vanilla yogurt
  • 1 egg, lightly beaten
  • 1/4 cup butter, melted
  • 2 tablespoons milk
  • 1 cup diced peeled clementines
  • 1 tablespoon grated clementine peel

Preparation

Step 1


In a bowl, combine the first five ingredients. In a small bowl, combine the yogurt, egg, butter and milk until smooth; stir into dry ingredients just until moistened. Stir in clementine and peel.

Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack.
