Vodka Sauce

  • 3 cups Marinara sauce
  • 1 cup vodka
  • 1/2 cup heavy cream, at room temperature
  • 1/2 cup grated Parmesan Cheese
  • 1/2 tsp salt, plus more to taste
  • 1/2 tsp. black pepper, plus more to taste

Step 1

IN A HEAVY, large skillet, simmer the marinara sauce and vodka over low heat, stirring often, until the mixture reduces by one-fourth, about 20 minutes. Stir in the cream and continue to simmer over low heat until the sauce is heated through. Remove the skillet from the heat and stir in the Parmesan, salt and pepper. Season with additional salt and pepper to taste, and serve over pasta.
