Stuffed Green Pepper Soup

This is a great soup, especially if you like stuffed peppers. It is much less work than stuffed peppers too!

Ingredients

  • 1 lb. Ground beef
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 14 oz. can tomato sauce
  • 14 oz. can diced tomatoes
  • 2 cups sliced green peppers
  • 1 cup well-cooked rice
  • 1 beef bouillon cube
  • 1 tsp. salt
  • 1 tsp. pepper
  • couple of pinches brown sugar
  • 1/4 to 1/2 tsp. garlic powder
  • 1/4 to 1/2 tsp. Nature’s Seasons (a spice by Morton’s)
  • 1/4 tsp. Greek Seasoning

Preparation

Step 1

In a large pot brown ground beef, onions, and garlic. Drain fat. To drained meat add remaining ingredients. Bring to boil. Reduce heat, cover, and simmer 40 minutes or until peppers are tender.
