Chicken Kabobs - Mexicana Style

Ingredients

  • 2 Tbs EVOO
  • 1 tsp cumin
  • 2 tbs chopped fresh cilantro
  • 1 lime - juice
  • salt and ground black pepper
  • 2 skinless, boneless chicken breasts cut into 1 inch cubes
  • 1 small zucchini, cut into 1/2 slices
  • 1 onion cut into wedges and separated
  • 1 red bell pepper, cut into 1 inch pieces
  • 10 cherry tomatoes

Preparation

Step 1

1. In a shallow dish mix EVOO and cumin, chopped cilantro and lime juice. Season with salt and pepper. Add Chicken, mix and cover. Refrig for min 1 hour.
2. Heat grill for high heat
3. Thread chicken, zucchini, tomatoes, bell pepper and onion on skewers.
4. Spray grill to prevent sticking and place skewers on grill. Cook for approximately 10 min.
