Pomegranate Glazed Carrots

Ingredients

  • 1 cup POM Pomegranate juice
  • 2 tbs honey
  • 1 pound carrots, peeled and cut into 1 in diagonal slices
  • 1 tbs EVOO
  • 1/4 tsp each of sea salt and freshly ground pepper
  • 1/2 cup Chopped walnuts
  • 1/4 cup dried cranberries
  • 1 tsp chopped fresh thyme

Preparation

Step 1

1. Place juice is a small saucepan over medium high heat - cook for 15 min or until reduced to 1/4 cup; stir in the honey. This can be prepared several days ahead and stored in frig tightly sealed
2. Heat oven 400. Stir together carrots, oil, salt and pepper on a small baking sheet; cook 15 min. stirring occasionally.
3. Stir glaze onto carrots and cook for 10 min. stirring once or twice. Top with walnuts and cranberries and cook another 5 min. or until carrots are nicely glazed.
4. Sprinkle with thyme.
