Ingredients

  • Topping:
  • 1/2 Cup Brown Sugar
  • 3 Tbs. Flour
  • Pinch of Salt
  • 2 Tbs. Butter
  • Base:
  • 1 Cup Flour
  • 1/4 Cup Powdered Sugar
  • 1/2 Cup Butter, softened
  • 1/4 tsp. Salt
  • Filling:
  • 4 Cups Peaches, peeled, sliced 1/2" thick
  • 2 tsp. Lemon Juice
  • 1/4 Cup Whipping Cream
  • 1 Egg Yolk

Step 1

Preheat oven to 425 degrees. Butter an 8" square baking dish and line the base and 2 sides with parchment paper. Combine brown sugar, flour, and salt for crumble topping in a bowl. Cut in butter until mixture is crumbly. Reserve crumble. Combine flour, powdered sugar, and salt to make the base. Cut in butter until mixture is crumbly and press into the prepared pan. Sprinkle half of crumble topping over pastry. Toss the peaches with lemon juice and fit into the pan in an even layer. Combine the cream and egg yolk and pour evenly over the peaches. Cover with remaining crumble. Bake for 10 minutes. Reduce the oven temperature to 375 degrees and bake for another 30-35 minutes or until the crumble is golden and the filling is bubbly. Cool before serving.
