Easter Basket Cupcake

Ingredients

  • Sweetened flake coconut
  • Chocolate frosting
  • Green food coloring
  • Jellybeans
  • Vanilla frosting
  • Licorice or caramel string
  • 1 cupcake

Put a handful of coconut in a Ziploc bag and add a few drops of green food coloring. Seal the bag and massage and shake it to distribute the color evenly. In a small bowl, use a few drops of green coloring to dye some vanilla frosting a bright grassy green.

Peel the paper off the cupcake and frost the sides with chocolate frosting. Spread the green frosting over the top. (If you prefer a more perfect look, spoon the green frosting into a Ziploc bag and snip off one corner with scissors. Then squeeze the bag and pipe the green frosting in concentric circles on top.)

Spoon some of the green coconut on top, leaving a rim of green frosting showing around the edge. Put a handful of jellybeans on top of the coconut grass.

For the basket handle, cut three 10-inch lengths of licorice or caramel string. Have a helper hold three ends together while you braid them into a handle, or tuck three ends under a plate to hold them while you braid. Push the ends into either side of the cupcake. (For an easier handle, just use a plain piece of licorice curved over the cupcake basket.)
