Key Lime Cake

Ingredients

  • 1 box of lemon cake mix
  • 1 3-oz. box of lime jello
  • 1/3 C. vegetable oil
  • 3 eggs
  • 1/2 C. orange juice
  • 3/4 C. water
  • 1 box pd. sugar
  • 1/4 C. key lime juice (bottled)
  • 1/4 C. key lime juice (fresh)
  • 8 oz. cream cheese (softened)
  • 1 cube butter (softened)
  • 1 tsp. vanilla

Preparation

Step 1

Prepare 3 round 9 inch pans by lining the bottoms of each with 9"circles of wax paper.

Grease wax paper with Pam and then sprinkle with flour.

Mix cake mix, jello, oil, eggs, orange juice and water together for 2 - 3 minutes at minimum speed.

Pour equal amount of batter into each of the three line pans.

Bake at 350 for 25 minutes.

While cakes are baking, knead and squeeze 2 key limes enough to make 1/4 C. of juice. Add 1/4 C. bottled lime juice and add 1/4 C. pd. sugar.

While cakes are warm, drizzle this glaze over the cakes. When cool, frost with cream cheese frosting.
