Potato Pancakes

Ingredients

  • 1 # all purpose potatoes, peeled & shredded
  • 1 med onion, shredded
  • 1 med carrot, shredded
  • 1/2 tsp fresh lemon juice
  • 1 egg, lightly beaten
  • 1 Tbls all-purpose flour
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/2 cup veg. oil
  • Applesauce or sour crea (optional)

Preparation

Step 1

1) Combine potatoes, onion, carrot, lemon juice, egg, flour, salt and pepper in a large bowl.

2) Heat oil in a large nonstick skillet.
Spoon 5 pancakes into oil, using 1 heaping tablespoon potato mixture for each; cook 1 1/2 minutes on each side.
Remove to paper toweling to drain.
Repeat with remaining mixture.
Serve with applesauce or sour cream, if desired.
