Pork Adobo

Ingredients

  • 1 (1 1/4 lb) boneless pork shoulder roast
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. soy sauce
  • 1/2 cup water
  • 3 garlic cloves, minced
  • 1 jalapeno, minced
  • 1/8 tea. crushed red pepper flakes
  • 1 cup long grain rice

Preparation

Step 1

Trim excess fat from pork and cut into 1" cubes. Combine in large bowl with vinegar, soy sauce, water, minced garlic, jalapenos, and pepper flakes and refrigerate overnight.

Pour marinated pork and sauce into 3 qt. slow cooker. Cover and cook on low for 8-9 hours or until pork is done and very tender.

Cook rice as dir3cted on the package. Serve pork mixture over rice.
