Tex Mex Pork Casserole

Ingredients
- 1 lb. pork loin
- 1 Tbsp. chili powder
- 1/2 ta. cumin
- 1/2 ta. salt
- 1/8 tea. cayenne pepper
- 1 Tbsp. butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno, minced
- 1/2 cup chicken stock
- 1/2 cup taco sauce
- 1 (15 oz) can black beans, rinsed and drained
Preparation
Step 1
Cut pork into 1" cubes. In a small bowl, combine chili powder, cumin, alt, and cayenne pepper and mix well. Add to pork cubes and toss to coat well. In heavy skillet, cook coated pork cubes in butt3r until browned, about 4 minutes.
Meanwhile, place onion, garlic, and jalapeno pepper in a 3 1/2 - 4 qt. slow cooker. Add browned pork cubes and pour chicken stock over all. Top with taco sauce and black beans; mix well. Cover and cook on low for 8-10 hours or until pork is very tender.
