Tomato Soup with Cannellini

Ingredients

  • 2 T. butter
  • 1 onion, chopped
  • 2 carrots, sliced (or 1/2 bag of mini carrots)
  • 2 cloves garlic, minced
  • 1 15 oz. can cannellini beans, drained and rinsed
  • 1 28 oz. can crushed tomatoes
  • 1 T. sugar
  • 3 cups chicken broth
  • 1 bay leaf
  • 1 t. basil
  • 1/2 t. red pepper flakes
  • 3/4 t. salt
  • 1/2 t. ground pepper

Preparation

Step 1

In large pot, melt the butter over medium heat. Add onion, carrots and garlic and cook until tender, about 4 min. Add remaining ingredients and bing ot a boil over high heat. Cover, reduce to a simmer and simmer for 30 min.
