Charcuterie Cones

Ingredients

  • 1 Shredded head of raddichio
  • 5 stemmed, seeded and chopped pepperocini
  • 2 OZ. fresh goat cheese
  • 1 Tsp. red wine vinegar
  • 1 Tsp. Olive Oil
  • 3 TBS. toasted pine nuts
  • 24 thin slices salami or sopprasetta

Preparation

Step 1

Combine all ingredients in a bowl.
Arrange 24 thin slices of meat on a solid work surface.
Mound salad mixture onto each piece.
Roll slices into a cone and place seam side down on serving platter. Use toothpick if necessary.
