Ingredients
- 1 Shredded head of raddichio
- 5 stemmed, seeded and chopped pepperocini
- 2 OZ. fresh goat cheese
- 1 Tsp. red wine vinegar
- 1 Tsp. Olive Oil
- 3 TBS. toasted pine nuts
- 24 thin slices salami or sopprasetta
Preparation
Step 1
Combine all ingredients in a bowl.
Arrange 24 thin slices of meat on a solid work surface.
Mound salad mixture onto each piece.
Roll slices into a cone and place seam side down on serving platter. Use toothpick if necessary.
