Ingredients
- 1 13.5 oz. can light coconut milk
- 2 1/2 C. skim milk
- 1/2 C. sugar
- 1 C. Arboric Rice
- 1/2 cinnamon stick
- 1 C. dried apricots, chopped
- 1/4 C. pistachio chopped
Preparation
Step 1
Place in 5 to 6 qt. slow cooker, whisk together the milk, coconut milk and sugar. Stir in rice and cinnamon stick.
Cook covered, until the rice is tender and mixture has thickened, 2 hrs on high. Discard cinnamon stick and stir in apricots. I left lid off for last 20 mins. to thicken. I also added more cinnamon powder. I use 1/2 t. cinnamon and 1/4 t. nutmeg in place of cinnamon stick.
