Homemade Carmel Corn

Ingredients

  • 2 bags microwave popped popcorn
  • 1 1/2 C. peanuts
  • 1 C. pecans, almonds or whatever you like
  • 1 C. butter
  • 2 C. brown sugar
  • 1/2 C. corn syrup
  • 1 t. salt
  • 1/2 t. soda
  • 1 t. vanilla

Preparation

Step 1

Pop bags of popcorn and pour into two 12X16" greased baking sheets. Remove unpopped kernels. Divide nuts evenly over both sheets.

In medium pot, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil 5 mins. Remove from heat and stir in baking soda and vanilla(mixture will foam).

Pour over popcorn and nuts. Bake 250* for about 1 hour, stirring every 15 mins. Remove from oven if coating begins to look dull. Cool completely. Break into pieces and store in an airtight container.
