Ingredients
- Carmelized almonds
- 1/4 C slivered almonds
- 2 T sugar
- ---------------------
- Salad
- 8 C greens (all spinach or mixture)
- 1 C celery, chopped
- 8 green onions chopped
- 11 oz can mandarin oranges, drained
- ---------------------
- Dressing
- 1 T olive oil
- 2 T vinegar (try flavored ones - Balsamic is good)
- 2 T sugar (or substitute)
- 1 garlic cloved chopped
- 1/2 tsp salt if desired
- Few dashes Tobasco sauce
Preparation
Step 1
- In small, heavy, nonstick pan toast almonds until light brown over medium heat
- In same hot pan, heat sugar until it is all melted - WITHOUT STIRRING - tilting or shaking pan as necessary to bring sugar in contact with hot surfaces
- Quickly add nuts and stir until all coated
- Remove nuts to a sheet of foil, spreading mixture out as thinly as possible; when cool break into chunks
- Toss salad ingredients together
- Mix dressing ingredients together and toss with salad; sprinkle with nuts
