Ingredients

  • 1 Can (20 oz.) Pineapple Chunks
  • 1/4 Cup Brown Sugar
  • 1/4 Cup Rice Vinegar or White Wine Vinegar
  • 3 Tbs. Soy Sauce
  • 2 Tbs. Cornstarch
  • 1 tsp. Garlic, minced
  • 1 Tbs. Fresh Ginger, grated
  • 2 lb. Chicken Thighs, boneless, skinless
  • 1 Cup Green Pepper, chopped
  • 1 Cup Onions, chopped
  • 1/2 Cup Baby Carrots

Step 1

Coat the inside of crock pot with cooking spray. Drain the pineapple and set it aside, reserving 1 cup juice. In the slow cooker, combine the brown sugar, vinegar, soy sauce, cornstarch, garlic, ginger, and reserved pineapple juice. Whisk until smooth. Add the chicken, green pepper, onions, and carrots. Stir to coat with the sauce. Cover and cook on low for 5-6 hours or on high for 2 1/2 to 3 hours. Stir in the reserved pineapple. Cook until the pineapple is heated, about 5 minutes more. Serve with rice.
