Greek Style Potatoes and Green Beans

Ingredients

  • 1 lb tiny new potatoes
  • 1/2 lb fresh green beans
  • Dressing
  • 1 T olive oil
  • 3 T balsamic vinegar
  • 1 T lemon juice
  • 1 t dijon mustard
  • 1/2 c chopped red onion
  • pinch salt

Preparation

Step 1

Scrub, but do not peel potatoes. In a covered pot, boil potatoes until tender. Add fresh green beans to potatoes 5-7 min before potatoes are done, depending on thickness of beans. Cook until beans are crisp tender. Whish together ingredients for dressing. When potatoes and beans are done, drain. Cut potatoes into quarters; gently stir in dressing. Season with salt and pepper; mix well and serve.
