  • 1 cup minced onion
  • 1/4 cup potato starch
  • 1/3 cup peanut oil
  • 1 teaspoon salt
  • 3 pounds potatoes, grated coarse
  • 1/4 teaspoon cinnamon
  • 2 large eggs, beaten lightly
  • 1/4 teaspoon pepper



Step 1

In a heavy skillet cook the onion in the peanut oil over moderately low heat, stirring, for 3 to 5 minutes, or until softened. Remove the skillet from the heat and let cool.

In a large bowl combine the onion mixture with the remaining ingredients. Transfer the mixture to a well-oiled 1-1/2-quart baking dish and bake in a preheated 400° F. oven for 1 hour, or until crusty and golden.
