Teriyaki Marinade

Ingredients

  • 1/2 Cup Tamari Soy Sauce
  • 1/2 Cup Mirin
  • 1/4 Cup Honey
  • 1/4 Cup Asian (dark) sesame oil
  • 4 Slices Ginger, , 1/4" thick each, flattened with cleaver
  • 3 Cloves Garlic, , flattened with a cleaver
  • 3 Scallions, , white part flattened with cleaver, green part chopped

Preparation

Step 1

Combine the tamari, mirin, and honey in a bowl and whisk until the honey is dissolved. Whisk in the remaining ingredients. The marinade tastes best used the day it's made.

Variation: Orange or Tangerine Teriyaki: Add 1/2 cup orange or tangerine juice when you add the tamari.
