Lime chicken Soft Tacos

Ingredients

  • 1-1/2 lb chicken breasts or thighs cubed
  • 1/8 c red wine vinegar
  • 1/2 lime juiced
  • 1 tsp white sugar
  • 1/2 tsp salt
  • 1/2 ground black pepper
  • 2 green onions chopped
  • 1 tsp dried oregano
  • 10 (6') tortillas
  • 1 tomato, diced
  • 1/4 c shredded lettuce
  • 1/4 c shredded monterey jack cheese
  • 1/4 c salsa
  • sour cream - optional

Preparation

Step 1

I used a little olive oil in pan. Saute chicken cubes over medium high heat for about 15-20 mins. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 5-10 mins. Heat an iron skkilet over medium heat. Place a torttilla in the pan, warm, and turn over to heat theother side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomatoe, lettuce, cheese, salsa and sour cream.
