Ingredients
- 1 cup crushed saltine crackers
- 1/4 cup melted margarine
- Celery seed, thyme, optional
- 2/3 cup shredded medium cheddar cheese
- 2 medium tomatoes, sliced and well-drained
- Salt , pepper, oregano
- 3 eggs, beaten
- 1/2 cup milk
- 4 slices bacon, crisply fried
Preparation
Step 1
Combine crushed crackers, margarine, a few shakes of celery seed and a pinch of thyme. Press into bottom and sides of a deep 9-inch pie plate. If crumbs seem too dry, add a little more margarine. Sprinkle half the cheese over the bottom crust and cover with sliced tomatoes. Sprinkle with salt, pepper and a pinch of oregano. Add remaining cheese and tomatoes. Sprinkle with seasonings. Pour a mixture of eggs and milk over the top. Sprinkle with crumbled bacon. Bake at 400F for 10 minutes thenreduce heat to 325F and bake until egg mixture is set, about 25 to 30 minutes. Cool 10 minutes before serving. Serve with tossed salad.
